The process involves salting and steeping the first harvest roe in Bloody Shiraz Gin for 24 hours. The finished product has the signature-shaped pearl is regarded for which is plump and made bright burgundy in colour thanks to the gin. Soft notes of citrus along with cassia, juniper and coriander seed, a salty pop of the roe with a lingering aroma of the Bloody Shiraz Gin is subtle yet present.
